Week 20, 21, and Nursery Progress!

Week 20 was momentous because we got to find out we are having a baby girl! Plus, the best part is she looks healthy and everything looks good!

Running has been good, when I have time to fit it in. We’ve been busy this last weekend with home projects and getting ready for the Super Bowl.

During the week I made up a recipe that turned out really good.

Asian Chicken Lettuce Wraps

Washed and separated Boston Bib Lettuce for cups


Heat a skillet to medium, add 1 Tbsp of Peanut Oil (or another oil or spray would work)

Brown ground chicken

After chicken is browned, add water chestnuts and 1-2 Tbsp of reduced sodium soy sauce

After sautéed, add diced green onion (and sliced red pepper if you have it) and 4-5 Tbsp of hoisin sauce

Reduce heat to low and add shredded carrot

Fill lettuce wrap with a scoop of the ground chicken mixture and enjoy!



We have some big nursery progress! First we got our Pottery Barn Princess Chandelier installed and we love it!


Then we also got the Pottery Barn Kendall crib in simply white and the Harper bedding in lavender.


So exciting!!! Up next more nursery furnishings and our first baby classes are right around the corner! 😀
